Baked Sweet Potato Fries with Harissa

Harissa Baked Sweet Potato Fries are a healthy, vegan and delicious side dish that you can make in less than an hour. They are crispy, flavorful and not too spicy, so they are perfect for kids and adults alike. You can serve them with a creamy harissa aioli that is easy to whip up with a few ingredients. Here’s how to make them:

Ingredients:

  • 1 extra large sweet potato (1 lb), peeled and cut into ⅓ inch thick fries
  • 1 tablespoon corn starch
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1-2 cloves garlic, finely minced (use a garlic press)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt and pepper

For the harissa aioli:

  • 1/3 cup vegan mayo or regular mayo
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chipotle powder (optional, or sub cayenne or chili flakes)
  • 1 teaspoon vinegar (apple cider, red wine or white)

Instructions:

  1. Preheat oven to 450 F (make sure it is hot).
  2. In a large bowl, toss the sweet potato fries with the corn starch.
  3. In a small bowl, whisk together the olive oil, smoked paprika, garlic, cumin, chili powder, salt and pepper.
  4. Drizzle the oil mixture over the fries and toss well to coat.
  5. Arrange the fries in a single layer on a baking sheet lined with parchment paper or on a cooling rack over a baking sheet.
  6. Bake for 20-30 minutes, flipping halfway through, until golden and crisp.
  7. While the fries are baking, make the harissa aioli by stirring together the mayo, smoked paprika, chipotle powder and vinegar in a small bowl.
  8. Serve the fries hot with the harissa aioli on the side or drizzled over them.
