Little Gem Wedge Salad

A refreshing and crunchy salad with little gem lettuce, beets, tomatoes, radishes, herbs and coconut bacon, drizzled with a rich and creamy gorgonzola dressing. This salad is perfect for a light summer meal or a side dish for grilled meat or chicken. You’ll love the contrast of flavors and textures in this delicious salad!

How to make this salad:

  1. Cook the beets until tender, either by roasting or boiling them. Peel and slice them and chill them in the fridge. You can do this step ahead of time.
  2. Make the dressing by whisking together mayo, sour cream, gorgonzola cheese, garlic, shallot, vinegar, chives, salt and pepper. You can also add some Worcestershire sauce or horseradish for extra flavor. Chill the dressing in the fridge as well. It tastes better when it’s cold.
  3. Prep the veggies by cutting the little gem lettuce into halves or quarters. Cut the tomatoes, radishes and onion into bite-sized pieces. You can also use cucumber or salad turnips instead of radishes.
  4. Assemble the salad by arranging the lettuce on a large platter or individual plates. Spoon some dressing over the lettuce. Top with beets, tomatoes, radishes, onion and coconut bacon (or regular bacon if you prefer). Sprinkle some more dressing over the salad and season with fresh pepper.
