Roasted Garlic Mashed Potatoes

These mashed potatoes are not your ordinary ones. They are infused with roasted garlic and a hint of horseradish, giving them a rich and complex flavor that goes well with any meaty dish. They are also vegan-friendly, as you can use plant-based alternatives for butter and sour cream. And the best part? You can make them in less than half an hour on the stovetop!

Ingredients

  • Potatoes – Use thin-skinned potatoes (such as baby reds, Yukon, yellow, white, or red) and keep the skins on for extra nutrients. If using russets, peel them first.
  • Sour Cream – Adds a nice tanginess to the mashed potatoes. You can also use creme fraiche or vegan sour cream.
  • Butter – Gives the mashed potatoes a delicious richness. You can also use browned butter, ghee or vegan butter.
  • Roasted Garlic – Adds a wonderful depth of flavor to the mashed potatoes. You can also use granulated garlic if you are short on time.
  • Horseradish – Gives the mashed potatoes a subtle kick that cuts through the richness of the dish. You can adjust the amount to your liking or omit it entirely.

Instructions

  1. Cut the potatoes into halves or quarters, making sure they are roughly equal in size.
  2. Cover the potatoes with salted water and bring to a boil. Simmer covered until they are fork-tender, about 20 minutes.
  3. Drain the potatoes, reserving 1 cup of hot potato water. Return the potatoes to the pot (or slow cooker) and mash them well with a potato masher.
  4. Add the butter, sour cream, salt, pepper, garlic and horseradish (if using) and whisk with the masher until smooth and creamy.
  5. Add some of the reserved potato water to loosen the potatoes, starting with 1/2 cup and adding more as needed.
  6. Transfer the mashed potatoes to a serving bowl and garnish with chives, pepper and a drizzle of melted butter. Top with whole roasted garlic cloves if desired. Keep them warm in a 200F oven until ready to serve.
