The Ultimate Vegan Breakfast Tacos

Steps to Make Vegan Breakfast Tacos

  1. Heat some olive oil in a skillet over medium-high heat and cook diced onion and bell pepper until soft and golden, about 10 minutes.
  2. While the onion and pepper are cooking, drain a 14-ounce block of firm tofu and pat it dry with paper towels. Crumble it with your fingers into small pieces.
  3. Add the tofu to the skillet with the onion and pepper and season with salt, chili powder, smoked paprika, cumin, oregano and a pinch of turmeric for color. Stir well and cook until the tofu is heated through and slightly browned, about 5 minutes. If the skillet seems dry, add a little more olive oil.
  4. Warm some 6-inch whole wheat tortillas over a gas burner or in a toaster oven until soft and pliable.
  5. Assemble the tacos by spooning some of the tofu scramble onto each tortilla and adding sliced avocado, radishes, pico de gallo, vegan sour cream, cilantro and hot sauce to taste.
