Vegan French Toast

  • Salt
  • Cinnamon
  • Nutmeg
  • Bread (fluffy and crusty)
  • Fruit (strawberries or other berries, or apples, pears, peaches)
  • Almonds (or other nuts)

Start by preheating the oven to 400°F and greasing a 9 x 13 inch baking dish. Then, blend the orange juice and zest, silken tofu, maple syrup, oil, plant-based milk, vanilla, salt, cinnamon, and nutmeg until smooth. This is your vegan custard that will soak into the bread.

Cut the bread into 1-2 inch chunks and toss them with the vegan custard in a large bowl. Add up to 3-4 cups of fresh fruit and ½ cup of sliced almonds or other nuts. Transfer the mixture to the prepared baking dish and spread it evenly.

Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for another 15 minutes until golden and bubbly.

Serve the vegan baked French toast hot or cold, with more maple syrup if desired. You can also make it ahead and refrigerate it overnight before baking.
