Watercress Salad with Orange, Avocado & Red Onion

This refreshing salad is perfect for spring detox. It features watercress, a leafy green that is rich in antioxidants and minerals, and citrus fruits, which are high in vitamin C and fiber. The turmeric dressing adds a burst of flavor and anti-inflammatory benefits. You can enjoy this salad as a light lunch or a side dish for any meal.

Ingredients

  • 4 cups watercress, washed and trimmed
  • 2 oranges, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1/4 cup toasted pistachios, chopped
  • 2 tablespoons hemp seeds (optional)

Turmeric Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  • In a small jar, whisk together all the dressing ingredients until well combined. You can also blend them in a blender for a smoother texture.
  • In a large platter, arrange the watercress, orange slices, grapefruit slices, pistachios and hemp seeds. Drizzle the dressing over the salad and toss gently to coat.
  • Enjoy right away or refrigerate for up to an hour before serving.
