Watermelon Salad

Enjoy this refreshing and colorful salad with juicy watermelon and ripe tomatoes, tossed with a tangy and sweet dressing and crunchy pistachios.

This salad is perfect for summer when watermelon and tomatoes are at their peak of freshness and flavor. It’s easy to make, vegan-friendly, and gluten-free. You can also add some crumbled feta cheese for extra creaminess and saltiness.

To make this salad, you will need:

  • 4 cups of cubed seedless watermelon
  • 4 cups of halved cherry tomatoes (you can use different colors for more variety)
  • 1/4 cup of chopped fresh mint leaves
  • 1/4 cup of chopped fresh basil leaves
  • 1/4 cup of roasted salted pistachios
  • Optional: 1/4 cup of crumbled feta cheese

For the dressing, you will need:

  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of white balsamic vinegar
  • 2 teaspoons of honey
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

To make the dressing, whisk together the olive oil, vinegar, honey, mustard, salt and pepper in a small bowl or jar until well combined.

To assemble the salad, arrange the watermelon and tomatoes on a large platter or in a salad bowl. Sprinkle the mint, basil, pistachios, and feta cheese (if using) over the top. Drizzle the dressing over the salad or serve it on the side.
