Cabbage Steaks

If you are looking for a simple, healthy and satisfying meal, you might want to try these cabbage steaks. They are roasted in the oven with olive oil and spices, and they come out tender, smoky and flavorful. You can serve them with a variety of sauces and sides, such as creamy polenta, mashed potatoes, risotto, beans, quinoa or rice. Cabbage is a great source of fiber, vitamin C, vitamin K and antioxidants, so it’s good for you too!

Ingredients

  • 1 or 2 small cabbages (purple or green)
  • Olive oil
  • Salt and pepper
  • Garlic powder
  • Smoked paprika
  • Red pepper flakes (optional)
  • Lemon zest
  • Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut off the stem end of the cabbage and save it for another use. Slice the cabbage into 1-inch thick rounds. You should get about three rounds from each cabbage.
  3. Place the cabbage rounds on the prepared baking sheet and brush both sides with olive oil. Sprinkle salt, pepper, garlic powder, smoked paprika and red pepper flakes (if using) over both sides. Top with lemon zest.
  4. Roast for 20 minutes in the middle rack of the oven, flipping halfway through. If you want to add parmesan cheese, sprinkle it over the cabbage after 15 minutes of roasting and continue baking.
  5. Serve hot with your choice of sauce and side dish.
