Nutritious Spinach Soup with Mint

Ingredients

  • 2 teaspoons of olive oil (or butter)
  • 1 onion, chopped
  • 1 potato, peeled and diced
  • 4 cups of vegetable broth
  • Salt and pepper, to taste
  • 8 cups of fresh spinach, washed and stemmed
  • 1/4 cup of fresh mint leaves
  • 2 teaspoons of apple cider vinegar

Instructions

  1. Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 15 minutes.
  2. Add the potato, broth, salt, and pepper and bring to a boil. Reduce the heat and simmer until the potato is tender, about 15 minutes.
  3. Turn off the heat and add the spinach, mint, and vinegar. Stir until the spinach is wilted, about 2 minutes.
  4. Transfer the soup to a blender and blend until smooth and creamy. You may need to do this in batches, depending on the size of your blender. Alternatively, you can use an immersion blender to puree the soup in the pot.
