Pumpkin Soup with Garam Masala

Ingredients:

  • 2 tablespoons of oil or butter
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 teaspoons of salt
  • 4 cups of vegetable or chicken broth
  • 4 cups of pumpkin puree (fresh or canned)
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of smoked paprika
  • 1/4 cup of heavy cream or coconut milk (optional)
  • Fresh herbs, toasted pumpkin seeds, croutons, or sour cream for garnish (optional)

Instructions:

  • Heat oil or butter in a large pot over medium-high heat. Add onion, garlic, and salt and cook until soft, stirring occasionally, for about 15 minutes.
  • Add broth and pumpkin puree and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
  • Stir in nutmeg, cinnamon, cumin, and smoked paprika. Taste and adjust seasoning as needed.
  • If you want a smoother soup, use an immersion blender or a regular blender to puree the soup until smooth. Be careful when blending hot liquids and work in batches if needed.
  • If you want a creamier soup, stir in heavy cream or coconut milk. You can also add more broth to thin out the soup if it’s too thick.
