Soba Noodle Salad

This is a quick and easy recipe for a delicious and healthy meal that can be enjoyed hot or cold. Soba noodles are tossed with a creamy sesame sauce, crunchy cucumber, and smoky salmon. It’s perfect for a weeknight dinner or a picnic lunch.

Ingredients

  • 8 ounces soba noodles
  • 1/4 cup tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 ounces smoked salmon, flaked
  • 1/4 cup chopped scallions
  • 2 tablespoons toasted sesame seeds
  • 1 large cucumber, peeled and sliced

Instructions

  • Cook the soba noodles according to the package directions. Drain and rinse under cold water.
  • In a small bowl, whisk together the tahini, soy sauce, rice vinegar, honey, sesame oil, ginger, salt, and red pepper flakes if using.
  • In a large bowl, toss the noodles with the sauce until well coated.
  • Add the smoked salmon, scallions, sesame seeds, and cucumber and toss gently to combine.
  • Enjoy hot or cold. Store leftovers in an airtight container in the refrigerator for up to 3 days.
