Spicy Miso Portobello Mushroom Burger (Vegan)

Enjoy a delicious and satisfying vegan burger with portobello mushrooms, caramelized onions, vegan cheese and vegan mayo. This easy recipe is perfect for a weeknight meal or a cookout with friends. You can grill the mushrooms or cook them in a skillet. Either way, they will be juicy and flavorful. Serve them on toasted buns with your favorite toppings and condiments.

Ingredients

  • 4 large portobello mushrooms
  • 2 tablespoons of oil
  • Salt and pepper
  • 4 vegan burger buns
  • Vegan cheese slices (optional)
  • Vegan mayo (optional)
  • Lettuce, tomato, onion, pickle, etc. (optional)

For the caramelized onions:

  • 2 large onions, thinly sliced
  • 2 tablespoons of oil
  • Salt and pepper
  • 2 teaspoons of balsamic vinegar
  • 1 teaspoon of brown sugar

Instructions

  1. To make the caramelized onions, heat oil in a large skillet over medium-low heat. Add the onions, salt and pepper and cook, stirring occasionally, for about 40 minutes or until golden and soft. Add the vinegar and sugar and cook for another 10 minutes or until caramelized. Set aside and keep warm.
  2. To prepare the mushrooms, wipe them clean with a damp paper towel and remove the stems. Brush them with oil and season with salt and pepper on both sides.
  3. To grill the mushrooms, preheat a grill to medium-high heat and cook for about 15 minutes, flipping once, until tender and charred. To cook them in a skillet, heat a large skillet over medium-high heat and cook for about 15 minutes, flipping once, until tender and browned.
  4. To assemble the burgers, toast the buns and spread some vegan mayo on both sides. Place a mushroom on the bottom bun and top with a slice of vegan cheese if using. Add some caramelized onions and your desired toppings. Cover with the top bun and enjoy!
